Ingredients:

1 tub | 200 g Tre Stelle® Bocconcini, drained and cut into halves 16 – 2” spears fresh melon (cantaloupe, honeydew, or watermelon) 8 slices prosciutto, cut into halves, lengthwise 16 small skewers or long toothpicks fresh chopped herbs and olive oil for garnish

Instructions:

Place a Bocconcini half onto each piece of melon and carefully wrap with prosciutto, secure with skewer or toothpick. Preheat grill to medium-high. Quickly sear skewers just until cheese begins to soften. Transfer to a serving dish and garnish with chopped fresh herbs and a drizzle of olive oil.

How long should I keep the plate in the oven?

To store your freshly prepared prosciutto and bocconcini skewers while you are preparing other food for your friends or family, you can turn the heat off in your oven and keep the skewers in to remain warm and retain their tasty flavor. However, you should keep in mind that because prosciutto is a thin, delicate meat, it has the tendency to dry out quickly. Therefore, you should aim to avoid keeping your bocconcini skewers in the oven for more than 5 to 10 minutes. Otherwise, you can risk overbaking the prosciutto portion of your skewer, which will make it crispy and burnt.

What is the best way to reheat this dish? 

If you have leftovers of this easy to make side dish, we suggest storing your skewers in an air-tight container before putting them in the fridge. While prosciutto and bocconcini on their own can last a couple of months in the refrigerator, you can store your skewers for approximately 2 – 3 days before they will start to go bad. 

Therefore, to reheat your prosciutto and bocconcini skewers once they have been stored in the fridge, we suggest turning your oven on low heat before placing your leftover skewers on a non-stick pan for 5 to 10 minutes. This will allow the bocconcini to melt once again. Alternatively, you can put your skewers on the BBQ for 2 to 3 minutes or until they crisp up. On the other hand, there is nothing wrong with eating your skewers cold, straight from the fridge. In fact, it will be precisely like a traditional Caprese skewer with a bit of a twist!

Can I add chicken to this recipe? 

Yes –you absolutely can add chicken to our delectable prosciutto and bocconcini skewers! It’s common to think that chicken and cantaloupe flavor pairings don’t complement one another. However, because the cantaloupe melon is already grilled on the barbeque in this recipe, the traditional sweetness of the melon taste transforms into one that is savory at heart as it caramelizes while maintaining subtle notes of sugariness.  

Therefore, by adding grilled chicken, not only will you add flavor to your palate with each bite, but you’ll also enhance the texture of the overall dish for a more enhanced, tasty experience that is easy to make.
